My kitchen dining ceiling gyprock needs replacing 7 x 2.7m along with cornice.

Posting as an expression of interest for a job to be completed in the next few months. Looking for a price ballpark and also best method/practice. I currently own a 1960’s house and in the kitchen/dining area is a “popcorn/textured ceiling”. I want the ceiling to be smooth so it doesn’t look dated before I install a new kitchen. I’m happy to screw sheets over the top of the original ceiling, even if it means loosing the 10-15mm of height or open to best suggestions or methods to achieve the result.
